Swiss chard is one of those vegetables that stays underrated despite being one of the most nutritious, versatile, and easy-to-grow greens you can find. At Farmsustaina, we grow it nearly year-round, and it’s always one of the first things to fly off our farm stand table. Here’s one of our favorite simple ways to use it.
Why swiss chard deserves a spot on your table
Swiss chard is packed with vitamins K, A, and C, plus magnesium, potassium, and iron. The colorful stems — red, yellow, orange, white — are edible and slightly sweeter than the leaves. Unlike spinach, chard holds up to cooking without falling apart, making it ideal for sautés, stews, pasta, eggs, and grain bowls. It’s a staple in our CSA boxes for good reason.
Simple garlic sautéed swiss chard
This recipe takes 10 minutes and works as a side dish or base for eggs, grilled protein, or pasta.
What you’ll need (serves 2–4)
1 large bunch of fresh swiss chard
3 cloves garlic, thinly sliced
2 tablespoons olive oil
Pinch of red pepper flakes (optional)
Salt and freshly ground black pepper
Squeeze of fresh lemon juice
Steps
1. Wash the chard and separate stems from leaves. Chop stems into 1-inch pieces, roughly tear the leaves.
2. Heat olive oil over medium heat. Add garlic and pepper flakes. Sauté about 60 seconds until fragrant.
3. Add chard stems first. Cook 2–3 minutes, stirring occasionally.
4. Add leaves. Toss and cook another 3–4 minutes until wilted and tender. Season with salt, pepper, and lemon.
5. Serve as a side, over rice, under a fried egg, or tossed with pasta and parmesan.
Tip from the farm
Always add the stems before the leaves — they take longer to cook. And don’t discard the colorful stems! They have a milder, slightly sweet flavor and satisfying bite.
